What makes Kosterina EVOO different from supermarket olive oil?

Most supermarket EVOOs contain 50-150 mg/kg of polyphenols. Kosterina Original EVOO has 500+ mg/kg -- verified by independent third-party testing after every harvest. We use only early-harvest Koroneiki olives from the Peloponnese, Greece, cold-pressed within hours of picking. More antioxidants, bolder flavor, measurably better health benefits.

What is the polyphenol count of Kosterina EVOO?

Kosterina Original EVOO has a polyphenol count of over 500+ mg/kg, and our Organic Everyday EVOO has 350+ mg/kg -- both measured by independent third-party analysis at harvest. For context, the EU authorised health claim for olive oil requires a minimum of 250 mg/kg; most supermarket EVOOs in the US contain ~150 mg/kg. How should I use Original EVOO vs. the Everyday EVOO?

Original EVOO (white bottle) is best used cold -- drizzling, dipping, finishing dishes, or as a daily wellness shot -- to experience its full bold, peppery flavor. For cooking at high heat (425F+), use Organic Everyday EVOO (blue bottle). Simple rule: white bottle on the table, blue bottle by the stove.

Is extra virgin olive oil good for you?

Yes -- and the research is robust. High-polyphenol EVOO like Kosterina's has been shown to reduce cardiovascular risk, lower inflammation, support brain health, regulate blood sugar, and protect cells from oxidative damage. What does early harvest mean on olive oil?

"Early harvest" designates extra virgin olive oils pressed from olives picked before full ripeness -- when the fruit is still green and polyphenol content is at its peak. As olives ripen, polyphenol levels drop significantly. Harvesting early also yields less juice per olive, which is why authentic early-harvest EVOO is rarer and more expensive. Kosterina exclusively uses early-harvest Koroneiki olives, which is why our oils consistently test at 350-500+ mg/kg polyphenols -- much higher than the industry average of ~150 mg/kg.

How should I store Kosterina EVOO to keep it fresh?

Store in a cool, dark place -- away from heat and direct sunlight. Never store next to the stove or on a sunny countertop, as both heat and light degrade polyphenols. Kosterina uses opaque glass and tin packaging specifically to protect against light. Once opened, use within 6 months for peak flavor and health benefits.
